Crunchies
So, my friend shared these with me and they are absolutely delicious! She had them on safari in South Africa and when she came back and told me about them, I knew I had to make them. Only two bowls, no mixer needed
INGREDIENTS:

2 cups old fashioned oats

1 cup cake flour*

1 cup shredded coconut
-
1 cup light brown sugar
-
1 tsp ground cinnamon
-
1 cup butter
-
1 tbsp golden syrup
-
1 tsp baking soda
-
2 tsp vanilla extract
DIRECTIONS:

Preheat oven to 350 F and grease a 16 x 16 square pan. Set aside

In a large bowl, mix the oats, flour, coconut, brown sugar and cinnamon with a wooden spoon. Set aside

In another bowl, melt the butter and mix in the golden syrup, baking soda and vanilla extract
-
Mix wet ingredients into dry

Put mixture into the pan and flatten with a spatula
-
Bake in the oven for 25-35 minutes, until the top is slightly browned. If you want, sprinkle some cinnamon sugar when you take your crunchies out

Let it cool for about 30 minutes before cutting. I recomend not trying to take them out of the pan because they crumble pretty easily. Enjoy!
*if you don't have cake flour- don't fret... Just measure a cup of all-purpose flour, and replace 2 tablespoons of the flour with 2 tablespoons of cornstarch
